Switch kidney beans for black beans in this flavorful side dish for a new twist on a classic recipe.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 cups water
  • 1 (15.5 ounce) can black beans
  • 1 teaspoon ground cumin
  • 1 beef bouillon cube
  • 1 cup rice
  • 0.5 teaspoon Creole seasoning, or to taste
  • 0.5 teaspoon dried cilantro
Instructions:
  • In a saucepan over medium heat, sauté onion and garlic in olive oil until softened, about 5 to 7 minutes.
  • Combine water, black beans, cumin, and beef bouillon cube with the onion and garlic mixture. Bring to a boil, then add rice, cover, and simmer for approximately 20 minutes until the rice is tender and the liquid is absorbed.
  • Fold in Creole seasoning and freshly chopped cilantro into the beans and rice with care.
