Satisfy the family with quick and easy homemade chicken taquitos filled with beans, green chile peppers, and cheese.
Ingredients:
  • 0.75 pound shredded cooked chicken
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
  • 1 (4 ounce) can diced green chiles, drained
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon minced garlic
  • 1 cup shredded Mexican cheese blend
  • 18 (6 inch) corn tortillas
  • cooking spray (such as Pam®)
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a saucepan over medium heat, stir together chicken, beans, diced tomatoes with green chile peppers, diced green chile peppers, cumin, chili powder, salt, and garlic. Cook until filling is heated through, about 5 to 10 minutes. Stir in Mexican cheese blend until melted, about 2 to 3 minutes. Remove from heat and serve.
  • Lay corn tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave until warmed, approximately 30 seconds.
  • Place a generous 2 to 3 tablespoons of filling down the center of each tortilla. Roll tortillas tightly around the filling, ensuring they are seam-side down, then give them a light spray of cooking oil.
  • Bake in the oven until golden brown and crispy, approximately 30 minutes.
