Easy corn muffin mix hush puppies spiced with garlic and onion.
Ingredients:
  • 2 (8.5 ounce) packages dry corn muffin mix (such as Jiffy®)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 3 eggs
  • 1 (5 ounce) can evaporated milk
  • 1 (14.75 ounce) can cream-style corn
  • 1 quart vegetable oil for frying, or as needed
  • 1 pinch salt to taste
Instructions:
  • Combine corn muffin mix with a harmonious blend of salt, garlic powder, onion powder, black pepper, and a touch of cayenne pepper until well mixed.
  • Combine the eggs and evaporated milk with the dry ingredients until just mixed.
  • Mix in cream-style corn to create a luscious batter. Allow the batter to rest as the oil warms up.
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • Carefully spoon one teaspoonful of batter into the hot oil, ensuring to stay close to the oil to prevent splattering. Fry hush puppies until they turn a beautiful golden brown, approximately 3 minutes per batch.
  • Using a slotted spoon, transfer the hush puppies to a paper towel-lined plate to drain. Optionally, sprinkle with salt to taste.
