Quick and easy traditional lamingtons with strawberry or raspberry jam filling for a delightful treat.
Ingredients:
  • 400g golden sponge cake
  • 82.50 gm strawberry or raspberry jam
  • 195.00 gm shredded coconut
  • 625.00 ml chocolate icing mixture
  • 125.00 gm boiling water
Instructions:
  • To assemble the lamington squares, carefully separate the sponge slabs. Generously spread jam over the bottom piece of sponge and top with the other sponge to create a delicious sandwich. Cut the filled sponge lengthways into 3 sections, then slice each section into 4 to make a total of 12 delectable lamington squares.
  • Spread shredded coconut on a tray. Mix icing sugar and boiling water in a large bowl until smooth. Use 2 forks to dip a lamington square into chocolate icing, ensuring all sides are coated. Let excess icing drip off, then roll the lamington in coconut until covered. Place on a wire rack and repeat to make a total of 12 lamingtons.
  • Allow the lamingtons to cool in the fridge for 10 minutes before enjoying. Keep the leftover lamingtons fresh by storing them in an airtight container in the refrigerator for up to 1 week.
