Whip up a delicious blueberry sheet cake with fresh or frozen blueberries - perfect for potlucks and serving a crowd.
Ingredients:
  • 4 eggs
  • 0.75 cup white sugar
  • 0.5 cup canola oil
  • 1 individual packet vanilla sugar
  • 2 teaspoons lemon juice
  • lemon zest
  • 1 pinch salt
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.25 cup milk
  • 3 cups blueberries
  • 2 tablespoons confectioners' sugar
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and generously grease a rimmed baking sheet.
  • In a large bowl, use an electric mixer to beat eggs until foamy. Add sugar, oil, vanilla sugar, lemon juice, lemon zest, and salt, then mix well.
  • In a bowl, mix flour, baking powder, and cinnamon. Alternate stirring in the flour mixture and milk into the egg mixture until well blended. Spread the batter onto the prepared baking sheet, then evenly distribute blueberries on top and gently press them into the batter.
  • Bake in the preheated oven for 20-30 minutes, or until a toothpick inserted comes out clean, adjusting time based on the baking sheet size.
  • Allow cake to cool completely for 1 to 2 hours, then sprinkle with confectioners' sugar and cut into squares.
