Make a delicious cherry tomato bolognaise in just 30 minutes, perfect for family dinners.
Ingredients:
  • 375g thin spaghetti
  • 18.20 gm olive oil
  • 1 small red onion, finely chopped
  • 500g 3 Star Pork & Beef Mince
  • 2 garlic cloves, crushed
  • 2.50 gm smoked paprika
  • 250g cherry tomatoes
  • 125ml beef stock
  • 42.00 gm lemon juice
  • 100g baby rocket leaves
  • 20.00 ml baby capers
  • 40g parmesan
  • 1 tsp lemon zest
Instructions:
  • Prepare the pasta in a generous amount of salted boiling water as per package instructions until it is al dente. Then, drain the pasta.
  • Heat oil in a large frying pan over high heat and sauté the onion until softened. Brown the mince, breaking up lumps with a wooden spoon, then stir in garlic and paprika and cook for 2 more minutes.
  • Combine tomatoes, stock, and lemon juice in a pot and bring to a boil. Lower the heat and simmer gently for 3-4 minutes until the tomatoes are soft. Add the spaghetti, rocket, and capers, then gently mix together. Serve the dish on plates, and sprinkle with Parmesan cheese and lemon zest.
