Elevate potato bake into a star dish with savory chicken entrée.
Ingredients:
  • 60g butter
  • 2 leeks, washed, thinly sliced (see note)
  • 5 garlic cloves, crushed
  • 342.48 gm milk
  • 580g chicken thigh
  • 187.50 ml grated cheddar
  • 1/2 x 800g pkt Roast Potatoes (Rosemary and Garlic)
  • Mixed green salad, to serve (see note)
Instructions:
  • Preheat your oven to 220C (200C fan-forced) with a baking tray inside to get it nice and hot.
  • Arrange the potatoes on the preheated tray and bake for 15 minutes until golden brown.
  • In a large saucepan over medium heat, melt butter. Sauté leek for 5 minutes until softened. Stir in garlic and cook for 1 minute. Sprinkle flour and cook for 30 seconds. Pour in milk and combine. Add chicken and simmer for 5 minutes until cooked. Remove from heat, stir through cheese, and season.
  • Pour the mixture into a 5 cup ovenproof baking dish and layer the sliced potato on top. Lightly coat with oil and place under the grill for 15 minutes, keeping it 15cm away from the heat until the top is golden and crispy. Enjoy with a side of mixed green salad.
