Flavorful chicken chili with simple ingredients - perfect for a quick, healthy dinner.
Ingredients:
  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 1 teaspoon fresh chopped garlic
  • salt and ground black pepper to taste
  • 1 (4 ounce) can chopped green chilies
  • 1 teaspoon chili powder, or more to taste
  • 2 (16 ounce) cans cannellini beans, divided
  • 2 cups chicken stock
  • 12 ounces cubed cooked chicken
Instructions:
  • In a pot over medium heat, sauté onion and celery for 5 minutes. Stir in garlic and cook until vegetables are tender, about 2 minutes. Season with salt and pepper. Add green chiles, chili powder, and 1 can of cannellini beans. Let flavors blend for about 5 minutes.
  • Next, transfer the second can of beans into a bowl and mash them until smooth. Combine the mashed beans with the onion and beans mixture. Then, pour in the chicken stock and add the cooked chicken. Reduce the heat and let it simmer for approximately 25 minutes.
