Savor the satisfaction of homemade chicken and cheese quesadillas in under 30 minutes with this effortless recipe. A delicious blend of flavors for a hassle-free dinner.
Ingredients:
  • 6 oz refrigerated cooked Southwest-flavor chicken breast strips (from 9- or 12-oz package)
  • 1/2 cup thick & chunky salsa
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • Cooking spray
  • 2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
  • 1/4 cup sour cream
Instructions:
  • Dice chicken into bite-size pieces. Combine the diced chicken with salsa in a small bowl.
  • Spritz one side of a tortilla with cooking spray and place it sprayed side down. Add one-fourth of the chicken mixture and 1/2 cup of cheese. Top with another tortilla and spray the top with cooking spray.
  • In a 10-inch nonstick skillet over medium heat, cook each quesadilla for 4 to 6 minutes, flipping halfway through, until golden brown. Cut into wedges and serve with sour cream and extra salsa, if desired.
