Whip up a quick dinner with just six ingredients in no time.
Ingredients:
  • 27.60 gm rice bran oil
  • 650g chicken thigh fillets, trimmed, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 267.50 gm Thai satay sauce
  • 50g baby spinach, chopped
  • 62.50 ml chopped fresh coriander
  • 8 flour tortillas
  • Fresh coriander sprigs, to serve
Instructions:
  • In a hot frying pan, sizzle chicken in 1 tablespoon of oil until golden. Toss in onion, cooking until tender. Pour in sauce and simmer until warm. Take off heat and mix in spinach and coriander.
  • Follow packet directions to warm the tortillas. Lay one tortilla on a flat surface. Add 1/8 of the chicken mixture to one side. Fold in half to create a semi-circle. Repeat with the rest of the tortillas and chicken mixture.
  • Prepare a dry pan and heat the remaining oil over medium-high heat. Cook quesadillas in batches for 1 to 2 minutes on each side until they turn golden and crisp. Serve with fresh coriander on top.
