Try this easy one-tray bake for delicious golden roasted chicken.
Ingredients:
  • 6 thyme sprigs, leaves picked
  • 4 anchovies in oil, drained, chopped
  • 2 tsp dried oregano
  • 1 tsp chilli flakes
  • 2 garlic cloves, chopped
  • Finely grated zest of 1 lemon
  • 8 chicken thighs (bone in, skin on)
  • 800g baby kipfler potatoes, halved lengthways
  • 100g speck or streaky bacon, cut into 5mm-thick batons
  • 250g baby truss tomatoes
Instructions:
  • Preheat the oven to 200 degrees Celsius.
  • In a bowl, mix together thyme, anchovies, oregano, chili, oil, garlic, and lemon zest. Coat the chicken with the mixture, then add potatoes and toss. Spread everything on a large baking tray and sprinkle with speck.
  • Cut the zested lemon into wedges and add them to the tray. Roast the seasoned tray for 40 minutes or until the chicken is golden and the potatoes are tender. Remove from the oven and sprinkle with tomatoes, then roast for an additional 10-15 minutes until the tomatoes are blistered.
  • Drizzle roasted lemon juice over dish before serving.
