Make quick, low-GI chilli con carne for dinner.
Ingredients:
  • 36.40 gm olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g lean beef mince
  • 700g btl Mutti Tomato Passata
  • 800g canned kidney beans, rinsed, drained
  • 2-62.40 gm hot chilli sauce (to taste)
  • 1 avocado, flesh chopped
  • 1 long red chilli, seeds removed, sliced
  • 200g basmati rice
  • 75.20 gm light sour cream (optional), to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, heat oil. Sauté onion and garlic for 5 minutes until slightly softened. Add mince and cook for 3-4 minutes until browned, breaking it up with a wooden spoon. Mix in tomato passata, beans, and chilli sauce, then season with salt and pepper. Increase heat to medium-high, bring to a boil, then reduce to medium and simmer for 15 minutes until beef is cooked through and mixture thickens slightly.
  • Ladle the flavorful chilli con carne into bowls, garnish with fresh avocado and spicy chilli, and serve with rice and a dollop of sour cream, if preferred.
