Vibrant salad with edamame, black beans, corn, and peas, dressed in flavorful herbs. Perfect for any occasion.
Ingredients:
  • 1 (16 ounce) package frozen shelled edamame (green soybeans), thawed
  • 1 (16 ounce) package frozen sweet corn, thawed
  • 1 (16 ounce) package frozen sweet peas, thawed
  • 1 (12 ounce) can black beans, drained and rinsed
  • 0.5 red onion, minced
  • 0.25 cup olive oil, or to taste
  • 0.25 cup red wine vinegar, or to taste
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried parsley
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon garlic powder
Instructions:
  • Combine the edamame, corn, peas, black beans, and red onion in a large mixing bowl.
  • Mix together the olive oil, vinegar, salt, parsley, black pepper, basil, and garlic powder with the edamame mixture.
  • Allow the dish to cool in the fridge for a minimum of 30 minutes before enjoying.
