Warm up with hearty potato and cauliflower soup with savory ham.
Ingredients:
  • 1 box (4.7 oz) Betty Crocker™ scalloped potatoes
  • 2 1/2 cups hot water
  • 1 cup chopped cauliflower
  • 1/8 teaspoon ground mustard
  • 1/8 teaspoon pepper
  • 1 can (10 1/2 ounces) condensed chicken broth
  • 1 cup cubed fully cooked ham
  • 1 cup half-and-half
  • Chopped fresh parsley, if desired
Instructions:
  • Combine the Sauce Mix, hot water, cauliflower, mustard, pepper, broth, and potatoes in a 3-quart saucepan. Bring to a gentle boil, stirring occasionally until heated through.
  • Lower the heat, cover the pot, and gently simmer for approximately 25 minutes, stirring occasionally, until the potatoes are soft.
  • Incorporate the ham and half-and-half, cooking uncovered for about 5 minutes until just hot (avoid boiling). Sprinkle with parsley as a finishing touch.
