Ingredients:
  • Melted butter, for greasing
  • 200mls milk
  • 125g butter, cubed
  • 100g good-quality dark cooking chocolate (like Plaistowe Cooking Chocolate), chopped
  • 35g (1/3 cup) cocoa powder, sifted
  • 3 eggs, at room temperature, lightly whisked
  • 300g (2 cups) self-raising flour
  • 160g (1 cup, lightly packed) brown sugar
Instructions:
  • Preheat your oven to 180°C and generously grease 12 medium (125ml or 1/2-cup) muffin pans with melted butter.
  • In a medium saucepan, combine milk, butter, chocolate, and cocoa. Heat over medium heat, stirring constantly until smooth for about 5 minutes (check microwave tip for an alternative method).
  • After a brief 5-minute cool down, gently incorporate the eggs using a fork until thoroughly combined.
  • Sift the flour into a large mixing bowl, then mix in the sugar. Add the cooled chocolate mixture and gently fold in using a large metal spoon until just combined. Avoid overmixing.
  • Evenly distribute the mixture into the greased muffin pans and bake in a preheated oven for 18-20 minutes or until a skewer comes out clean. Let them cool in the pans for 2-3 minutes before transferring to a wire rack. Enjoy warm or at room temperature.
