Create a delicious stir-fry in minutes using store-bought ingredients for a quick and easy school-night meal.
Ingredients:
  • 350g fresh chow mein noodles
  • 76.25 gm oyster sauce
  • 1/2 tsp ground white pepper
  • 42.00 gm salt-reduced soy sauce
  • 18.20 gm peanut oil
  • 2 garlic cloves, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 250g packet (slow-cooked and shredded) barbecue pork
  • 2.50 gm cornflour
  • 127.50 gm salt reduced chicken style liquid stock
  • 225g bag coleslaw mix
  • 62.50 ml roughly chopped fresh coriander leaves, plus extra sprigs to serve
  • Lime wedges, to serve
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Allow them to sit for 1 to 2 minutes, then drain them.
  • In a bowl, mix oyster sauce, white pepper, and soy sauce. Heat oil in a wok over medium-high heat, then add garlic and ginger. Stir-fry for 1 minute until fragrant. Add the sauce mixture and pork, stir-fry for 2 to 3 minutes until heated through.
  • Whisk cornflour with half of the stock until smooth. Pour in the rest of the stock. Mix well. Combine coleslaw mix, noodles, and stock mixture with pork in a wok. Stir-fry for 3 to 4 minutes until heated through and coleslaw mix starts to wilt. Toss in coriander. Sprinkle with extra coriander sprigs and serve with lime wedges.
