Indulgent shrimp enchiladas with creamy cheese filling.
Ingredients:
  • 1 pound cooked shrimp - peeled, deveined and chopped
  • 1 (4 ounce) package cream cheese, softened
  • 2 teaspoons chopped fresh cilantro
  • 2 teaspoons lime juice
  • 1 (10 ounce) can green chile enchilada sauce
  • 6 (8 inch) flour tortillas
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Combine shrimp, cream cheese, garlic, cilantro, and lime juice in a skillet over medium heat until the cream cheese is silky and the shrimp are warmed, for 5 to 7 minutes.
  • Evenly distribute the shrimp mixture onto each tortilla. Roll the tortillas tightly around the filling to create enchiladas. Place the enchiladas seam side down in a baking dish.
  • Cover tortillas generously with the flavorful enchilada sauce.
  • Bake until golden and bubbling, approximately 20 minutes in a preheated oven.
