Quick and tasty seafood yellow curry made with only 5 ingredients in just 15 minutes.
Ingredients:
  • 75g curry paste
  • 400g pkt Coles Australian Broccoli, Cauliflower, Pumpkin & Sweet Potato or 2 x 150g pkts Australian Broccoli & Cauliflower Florets
  • 400ml can coconut cream
  • 750g Seafood Marinara Mix Thawed (from the deli)
  • 62.50 ml basil leaves, plus extra to serve
Instructions:
  • 1. Preheat a wok or large non-stick frying pan over high heat. Sizzle the curry paste for 1 min until fragrant. Toss in the veggies, coconut cream, and 1 cup (250ml) water. Bring to a boil, then simmer on medium-low for 10 mins or until veggies are tender.
  • Pour in the flavorful marinara mix, then simmer with a lid on for 3-4 minutes until the seafood is perfectly cooked.
  • Take the pan off the heat and gently incorporate the fresh basil. Portion out the seafood mixture into individual serving bowls and garnish with additional basil leaves before serving.
