Quick Thai beef salad cups - perfect for weeknights or entertaining.
Ingredients:
  • 18.20 gm peanut oil
  • 250g 4-star beef mince
  • 1 garlic clove, crushed
  • 40.00 ml kecap manis, plus extra to serve
  • 24.40 gm fish sauce
  • 1/2 x 250g packet microwave black rice
  • 1/2 small pomelo, peeled, segmented, chopped
  • 21.00 gm lime juice
  • 24 baby gem lettuce leaves
  • 2 baby cucumbers, peeled into ribbons
  • 1/2 small red onion, finely chopped
  • 100g perino tomatoes, thinly sliced
  • Fresh coriander sprigs, to serve
  • Sliced red chilli, to serve
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Add mince and cook for 5 minutes or until browned, breaking it up with a wooden spoon. Stir in garlic and cook for 1 minute. Add kecap manis and fish sauce, stir to combine. Mix in unheated rice and cook for 2 minutes until heated through. Remove from heat and stir in pomelo and lime juice.
  • Place a generous amount of mince mixture on each lettuce leaf. Add sliced cucumbers, red onion, and tomato on top. Sprinkle with fresh coriander and sliced chilli. Finish with a drizzle of extra kecap manis. Serve with lime wedges on the side.
