Surprise Mom with a homemade treat on Mother's Day and enjoy them together for a special afternoon tea.
Ingredients:
  • 375.00 ml plain flour
  • 2.00 gm baking powder
  • 65.00 gm cocoa powder, sifted
  • 322.50 gm caster sugar
  • 380.00 gm Dark CHOC BITS
  • 250.00 ml vanilla and strawberry mini marshmallows
  • 200g butter, chopped
  • 3 eggs, lightly beaten
  • Vanilla ice-cream, to serve
  • Strawberries, to serve
Instructions:
  • Combine flour and baking powder in a bowl. Transfer the mixture into a jar. Layer with cocoa, sugar, chocolate chips, and marshmallows. Seal the jar and create a label with the remaining instructions. Gift the jar to your mom.
  • Heat the oven to 180°C (160°C fan-forced) and prepare a 3cm-deep, 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang on the long ends.
  • In a large microwave-safe bowl, place the butter. Microwave uncovered on medium (50%) for 1 to 2 minutes until melted. Let it cool for 15 minutes.
  • Combine the eggs with the butter and stir well. Gradually incorporate the ingredients from the jar, stirring thoroughly. Spread the mixture into the prepared pan and bake for 35 to 40 minutes or until a skewer inserted in the center comes out with crumbs clinging. Allow it to cool before serving.
  • Cut the dish into squares and enjoy with a side of ice-cream and fresh strawberries.
