Impress guests this Christmas with a decadent, moist fruit cake.
Ingredients:
  • 625.00 ml plain flour
  • 3.75 gm mixed spice
  • 90.00 gm dark brown sugar
  • 1000.00 ml fruit mince (see notes)
  • 100g packet red glace cherries, chopped
  • 2 tsp finely grated orange rind
  • 21.00 gm orange juice
  • 4 eggs, lightly beaten
  • 250g butter, melted, cooled
  • 375.00 ml blanched almonds, to decorate
  • 62.50 ml brandy
Instructions:
  • Preheat the oven to 150C/130C fan-forced. Grease a 20cm square cake pan and line it with 3 layers of baking paper, making sure to extend the paper 3cm above the edges of the pan for easy removal later.
  • In a large bowl, combine sifted flour, bicarbonate of soda, and mixed spice. Add sugar, fruit mince, cherries, orange rind, orange juice, egg, and butter. Mix until fully combined. Transfer the mixture into the prepared pan, tap gently on the counter to remove air bubbles, level the top, and arrange almonds on top.
  • 1. Bake the cake for 3 hours, or until a small knife inserted into the center comes out clean. If the top starts to brown too quickly, cover loosely with foil. 2. Once baked, drizzle the cake with brandy and tightly cover with foil. 3. Allow the cake to cool completely by turning it onto a flat board. Serve and enjoy!
