Healthy turkey meatballs with quinoa, chia seeds, and veggies.
Ingredients:
  • nonstick cooking spray
  • 0.75 cup water
  • 3 tablespoons chia seeds
  • 2 medium onions, peeled
  • 6 large carrots, peeled
  • 4 stalks celery
  • 4 cups baby spinach
  • 6 cloves garlic
  • 2 tablespoons olive oil
  • 2 pounds lean ground turkey
  • 2.5 cups cooked quinoa
  • 2 large eggs, beaten
  • 5 tablespoons low-sodium soy sauce
  • 4 teaspoons Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 0.5 cup reduced-sugar ketchup
Instructions:
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly spray with nonstick spray.
  • Combine water and chia seeds in a bowl and let soak for 15 minutes, stirring occasionally to ensure all seeds absorb the water evenly.
  • Pulse onions, carrots, celery, spinach, and garlic in a food processor until finely chopped.
  • In a skillet, warm olive oil over medium heat. Sauté vegetable mixture until softened, around 8 minutes. Allow it to cool slightly for about 10 minutes before combining with other ingredients.
  • In a big bowl, combine turkey, quinoa, eggs, soy sauce, Worcestershire sauce, pepper, and salt. Gently fold in the chia seed and water mixture until it resembles a firm gelatin. Stir in the cooled vegetable mixture.
  • Form the turkey mixture into 48 delectable meatballs and arrange them on the pan. Give them a tantalizing brush of ketchup.
  • Bake in a preheated oven for 20-25 minutes until centers are no longer pink. Use an instant-read thermometer to ensure it reaches at least 165°F (74°C).
