Sauteed radish greens and leeks in a fluffy egg frittata, topped with your favorite hot sauce for a tasty brunch.
Ingredients:
  • 1 tablespoon olive oil
  • 2 ounces leeks, chopped
  • 1 bunch raw radish greens
  • 8 large eggs
  • 4 tablespoons grated Parmesan cheese
  • 2 tablespoons heavy whipping cream
  • 4 radishes, shredded
Instructions:
  • In an oven-safe skillet, warm olive oil over medium heat. Sauté leeks until soft and separated, about 3-5 minutes. Stir in radish tops and cook until wilted, another 3-5 minutes.
  • Position the oven rack 6 inches below the broiler and preheat the broiler.
  • Combine eggs, grated Parmesan cheese, and heavy cream in a bowl, then pour the mixture into the skillet with the leeks. Cook on medium-low heat covered until edges are set and pulling away from the skillet sides, for 5 to 10 minutes.
  • Broil the skillet until the cheese is beautifully browned on top, about 3 to 5 minutes.
  • Take the skillet out of the broiler and let it rest for 10 minutes. Sprinkle with shredded radishes and serve warm or cold.
