Cheesy baked breaded eggplant slices, a family-favorite dinner delight.
Ingredients:
  • cooking spray
  • 4 large eggs
  • 3 tablespoons water
  • 2 cups plain dry bread crumbs
  • 2 medium eggplants, peeled and cut into 1/4-inch-thick slices
  • 1 (24 ounce) jar RAGÚ® Old World Style® Traditional Sauce
  • 0.5 cup reduced-fat grated Parmesan cheese
  • 1 cup shredded part-skim mozzarella cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease baking sheets with cooking spray.
  • In a shallow bowl, combine the eggs and water, then set aside. In another bowl, put the bread crumbs.
  • Coat eggplant slices in the egg mixture and press them in bread crumbs. Place them in a single layer on the baking sheets.
  • Bake until the eggplant turns golden in the preheated oven for approximately 25 minutes.
  • Spread a layer of 1 cup sauce in the baking dish. Arrange half of the eggplant slices on top, followed by another layer of 1 cup sauce and 1/4 cup Parmesan cheese. Repeat the layers once more. Cover tightly with foil.
  • After baking for 45 minutes, unveil the dish, generously sprinkle mozzarella cheese on top, and bake for an additional 10 minutes until the cheese is gooey and melted to perfection.
