Try this stunning rainbow citrus cake with layers of lemon, lime, and orange, filled with lemon curd and topped with orange frosting.
Ingredients:
  • 3.5 cups all-purpose flour
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.75 cup shortening
  • 2.25 cups white sugar
  • 4 eggs, room temperature
  • 1.5 cups milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons grated lemon zest
  • 2 teaspoons grated orange zest
  • 2 teaspoons grated lime zest
  • 2 drops yellow food coloring
  • 2 drops orange food coloring
  • 2 drops green food coloring
  • 1 recipe Lemon Custard Filling
  • 1 recipe Orange Cream Frosting
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare three 9-inch pans by greasing and flouring them. Then, sift together the flour, baking powder, and salt, and set aside.
  • Cream together fluffy shortening and sugar in a generous-sized bowl. Add eggs one by one, making sure each is fully mixed in, then blend in vanilla. Alternate flour mixture and milk while beating, then divide batter among 3 bowls.
  • Combine lemon zest and yellow food coloring in one bowl, orange zest and orange food coloring in another bowl, and lime zest and green food coloring in the last bowl. Then, pour each mixture into its respective prepared pan.
  • Bake the cake layers in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Layer the cake by sandwiching Lemon Filling between each layer. Cover the sides and top with Orange Cream Frosting. Chill in the refrigerator until ready to serve.
