Whip up multiple batches of delightful rainbow egg cookies for endless enjoyment!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 egg
  • 3 food colors
  • Granulated sugar, if desired
  • 1/2 tub from (12 oz) Betty Crocker™ Whipped Vanilla Frosting
Instructions:
  • Preheat your oven to 375°F. In a medium bowl, combine cookie mix, butter, flour, and egg until the dough forms. Separate the dough evenly into 3 bowls and add a few drops of your chosen food color to each bowl, stirring to tint the dough.
  • Take 1/3 cup of each colored dough and shape it into a 5-inch long rope, about 1-inch in diameter. Arrange the ropes side by side, slightly more than 1/4 inch apart on a floured surface, then roll until 1/4 inch thick. Use a 2- to 2 1/2-inch egg-shaped cookie cutter to cut out cookies with all 3 colors. Sprinkle with sugar and place 2 inches apart on an ungreased cookie sheet. Repeat with the rest of the dough, carefully matching colors when rerolling scraps.
  • Bake for 7 to 9 minutes until edges turn lightly golden. Allow to cool for 1 minute, then transfer to a wire rack. Let them cool completely for about 30 minutes. Spread frosting on the bottom of half the cookies and sandwich with the remaining cookies.
