Involve kids in making colorful rainbow cookies.
Ingredients:
  • 250g butter, softened
  • 180.00 gm firmly packed brown sugar
  • 107.50 gm caster sugar
  • 13.20 gm vanilla extract
  • 2 eggs
  • 687.50 ml plain flour
  • 4.00 gm baking powder
  • 200g packet chocolate freckles
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare 2 large baking trays with baking paper.
  • With an electric mixer, whip together butter, sugars, and vanilla until airy and creamy. Incorporate eggs one at a time, mixing until fully incorporated.
  • Sift flour and baking powder over the butter mixture and stir until combined using a wooden spoon. Roll level tablespoons of the mixture into balls and place them on prepared trays, 2cm apart to allow room for spreading. Press them slightly.
  • Press your finger gently into the top of each cookie to create a 4.5cm round shape. Bake in the oven for 12 to 15 minutes, switching the trays halfway through, until they turn light golden brown. Let the cookies cool on the trays for 5 minutes, then transfer them to a wire rack to cool completely. Serve and enjoy!
