Rainbow Surprise Cupcakes

Add vibrant sprinkles to cupcakes for a festive touch!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Party Rainbow Chip Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 cup assorted Betty Crocker™ candy sprinkles
  • 1 tub (16 oz) Betty Crocker™ Original Rainbow Chip Frosting
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake batter following the instructions on the box. Fill each muffin cup two-thirds full with the batter. Bake for 20 to 22 minutes until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool in the pans for 10 minutes, then transfer them to a cooling rack. Let them cool completely for about 30 minutes before serving.
  • Hollow out the center of each cupcake with a melon baller or small spoon, making sure to go about 1 inch deep. Then generously fill each cavity with 1 heaping teaspoon of colorful candy sprinkles.
  • Cover the cupcakes generously with frosting and store them loosely covered.
