Zesty citrus-infused raisin pie with plump raisins soaked in orange and lemon juices, highlighted by a touch of rind for extra flavor and texture. Thickened with flour and baked to perfection in a golden crust.
Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 0.33329999446869 cup lemon juice
  • 1 teaspoon grated lemon zest
  • 0.5 cup orange juice
  • 2 teaspoons grated orange zest
  • 1.25 cups water
  • 1 cup brown sugar
  • 2 cups raisins
  • 0.75 cup all-purpose flour
  • 0.5 cup water
Instructions:
  • Preheat oven to 400°F (200°C) for the perfect cooking temperature.
  • Combine lemon juice, lemon rind, orange juice, orange rind, water, sugar, and raisins in a saucepan. Simmer gently, stirring occasionally, until boiling.
  • Combine flour and 1/2 cup water in a small bowl to create a smooth paste. Gently incorporate into the raisin mixture. Cook for 5 minutes, stirring continuously. Transfer the mixture into a pastry-lined pan and cover with the top crust. Seal the edges and create steam vents on the top.
  • Bake until the crust is beautifully golden brown for about 40 minutes in the preheated oven.
