Ingredients:
  • 3 (3 ounce) packages uncooked chicken flavored ramen noodle soup
  • 0.33333334326744 cup creamy peanut butter
  • 1.5 cups Swanson® Thai Ginger Flavor Infused Broth
  • 0.25 cup soy sauce
  • 1 tablespoon sugar
  • 1 small red bell pepper, chopped
  • 1 large onion, chopped
  • 1 tablespoon minced garlic
  • 1 pound broccoli florets
Instructions:
  • Discard the seasoning packets from the soup. Bring a 6-quart saucepot of water to a boil over medium-high heat. Add the noodles and broccoli, cook for 3 minutes until tender. Drain the noodles and broccoli thoroughly in a colander.
  • In a large bowl, whisk together the creamy peanut butter, savory broth, rich soy sauce, and a hint of sugar until smooth. Add in the noodles, crisp broccoli, colorful bell pepper, fragrant onion, and pungent garlic, then toss everything together until well coated. Cover and chill in the refrigerator for 2 hours, giving it an occasional stir.
