Ramen noodles in a jar

Flavorful and fresh healthy lunch to grab on the go.
Ingredients:
  • 1/2 tsp sambal oelek, plus extra to serve (optional)
  • 60ml (1/4 cup) light coconut milk
  • 5.30 gm fresh lime juice
  • 100g shelf-fresh wholegrain noodles, rinsed to separate
  • 1/2 carrot, shredded or spiralised into noodles
  • 65g zucchini noodles
  • 60g button mushrooms, thinly sliced
  • 125ml (1/2 cup) Reduced Salt Chicken Style Liquid Stock
  • 1 hard-boiled egg, peeled, halved
  • Fresh coriander leaves, to serve
Instructions:
  • Mix together the sambal, coconut milk, and lime juice in a microwave-safe jar with a lid that holds 500ml (2 cups).
  • Assemble the wholegrain noodles, carrot, zucchini noodles, and mushrooms in the jar. Refrigerate until serving.
  • Pour in the stock and 125ml (1/2 cup) water into the jar, cover with plastic wrap, and microwave on high for 2 minutes or until soup is hot and vegetables are tender. Finish by adding the egg and garnishing with coriander leaves.
