Savoury Asian duck noodle broth - simple and tasty.
Ingredients:
  • 40ml (2 tbsp) canola oil
  • 4 eschallots, finely chopped
  • 1.25L (5 cups) chicken style liquid stock
  • 2cm piece ginger, peeled
  • 2 star anise
  • 1 cinnamon stick
  • 300g ramen noodles*
  • 20ml (1 tbsp) fish sauce
  • 1 bunch gai larn (Chinese broccoli)*, chopped
  • 1 barbecued duck*, chopped
  • 2 hard-boiled eggs, shelled, halved
Instructions:
  • In a pan over medium heat, warm oil. Sauté eschallots for 30 seconds, then pour in stock and bring to a boil. Lower heat, stir in ginger, star anise, and cinnamon, and let it simmer for 30 minutes. Meanwhile, cook noodles according to package instructions in a separate pan, drain, and set aside. Stir in fish sauce and gai larn to the broth and simmer for 1 minute. Serve by dividing noodles into bowls, ladling over the broth, and topping with duck pieces and half of a boiled egg.
