Upgrade weeknight dinners with tantalizing ranch baked potatoes and vegetables.
Ingredients:
  • 0.5 cup olive oil
  • 1 (1 ounce) package dry ranch dressing mix
  • 4 large potatoes, peeled and coarsely chopped
  • 2 zucchini, coarsely chopped
  • 3 stalks celery, coarsely chopped, or more to taste
  • 1 onion, coarsely chopped
  • 0.5 cup seasoned bread crumbs
  • 1 pinch garlic salt
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In an 8-inch square baking pan, combine olive oil and ranch dressing mix. Add half of the potatoes, zucchini, and onion; stir to coat. Add the remaining potatoes, zucchini, celery, and onion; stir to coat. Sprinkle bread crumbs and garlic salt over the top.
  • Roast in the oven until vegetables are tender, about 50-60 minutes.
