Cheesy Ranch potatoes: the perfect BBQ or potluck side dish.
Ingredients:
  • 4 pounds russet potatoes, cut into 1/4 inch cubes
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 6 tablespoons butter, cubed
  • 1 (8 ounce) package shredded colby-Monterey Jack cheese blend
  • 1 (8 ounce) bottle Ranch dressing
Instructions:
  • Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  • Add a touch of heat and flavor to the potatoes by generously sprinkling them with chili powder, salt, and pepper. Drizzle melted butter evenly over the top before baking.
  • 1. Place dish in preheated oven and bake for 1 hour until potatoes are tender, covered with aluminum foil. 2. Remove from oven and stir in cheese and Ranch dressing. Return to oven and bake for an additional 10 minutes until cheese is melted and bubbly.
