Ranch Chicken Patties

25-minute dinner: White chicken patties with a crunchy coating of Progresso® Italian Style Bread Crumbs and ranch dressing for extra flavor!
Ingredients:
  • 1/4 cup purchased ranch salad dressing
  • 1 egg
  • 2 (5-oz.) cans chunk white chicken in water, drained, flaked
  • 2 tablespoons drained diced pimientos
  • 1 cup Progresso™ Italian Style Bread Crumbs
Instructions:
  • In a medium bowl, blend together the salad dressing and egg until fully combined. Mix in the chicken, pimientos, and 1/2 cup of bread crumbs until well incorporated. Shape the mixture into 4 heart-shaped patties that are 1/2 inch thick. Optionally, use a 3 to 4-inch heart-shaped cookie cutter as a mold. Finally, coat the patties evenly with the remaining 1/2 cup of bread crumbs.
  • Prepare a generously oiled nonstick skillet and heat over medium heat until sizzling. Place patties in the skillet and cook for 8 to 12 minutes until beautifully golden and heated through, remember to flip them halfway through.
  • Serve the patties on a bed of crisp lettuce and drizzle with more tangy ranch dressing, if you like.
