Raspberry Chipotle Sauce

Spicy jalapeno and berry sauce adds addictively delicious flavor to salmon, chicken, pork, or any dish.
Ingredients:
  • 2 tablespoons olive oil
  • 2 large jalapeno peppers, seeded and diced
  • 4 teaspoons adobo sauce
  • 2 (6 ounce) containers fresh raspberries
  • 0.5 cup apple cider vinegar
  • 0.25 cup brown sugar
Instructions:
  • Warm olive oil in a skillet over medium heat. Sauté jalapenos until tender, about 5 minutes. Add garlic and adobo sauce, then bring to a simmer. Gently fold in raspberries and cook until soft, around 3 minutes. Stir in vinegar, salt, brown sugar, and white sugar until well combined. Simmer until the sauce thickens and reduces by half, approximately 15 minutes. Transfer to a heatproof bowl and let it cool to room temperature before serving, about 20 minutes.
