Raspberry Crumble Bars

Buttery crumble bars with a European flair, filled with raspberry jam for a nostalgic touch.
Ingredients:
  • cooking spray
  • 2.25 cups all-purpose flour
  • 1 cup white sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 0.75 cup raspberry jam
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease an 8-inch square cake pan with cooking spray.
  • In a large bowl, mix together flour, sugar, butter, and egg until it forms a crumbly mixture using an electric mixer. Set aside 2 cups of the crumb mixture. Press the rest firmly into the bottom of the pan.
  • Spread a generous layer of jam over the crumb mixture, leaving a small border around the edges. Sprinkle the remaining crumb mixture on top for a delicious finishing touch.
  • Bake in the preheated oven for 40-50 minutes until beautifully golden. Let it cool completely before cutting into 25 squares.
