Raspberry jam drops

Indulge in a deliciously sweet jam-flavored dessert!
Ingredients:
  • 250g butter, softened
  • 215.00 gm caster sugar
  • 1 egg
  • 625.00 ml plain flour
  • 108.90 gm raspberry jam, warmed
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line 2 large baking trays with baking paper.
  • In an electric mixer, whip together butter and sugar until creamy. Mix in the egg until well combined. Gradually add flour and stir until a dough ball forms. Shape the dough into a disc, cover with plastic wrap, and chill in the refrigerator for 1 hour.
  • Form level tablespoons of dough into balls and arrange them on the prepared trays, ensuring they are 4cm apart to allow for spreading. Use a lightly floured thumb or the end of a wooden spoon to create an indentation in the center of each ball. Chill in the refrigerator for 20 minutes.
  • Bake for 20 minutes until golden. Remove from oven and quickly redefine the indent with the end of a wooden spoon. Fill each center with 1/4 teaspoon of warm raspberry jam. Allow drops to cool completely on trays before serving.
