Raspberry-Lemonade Cake

Discover the joy of a fruity poke cake by Betty Crocker - a delectable treat with a burst of citrus-berry flavors.
Ingredients:
  • 1 cup very hot water
  • 1 box (4-serving size) Jell-O™ raspberry-flavored gelatin
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1/2 cup frozen (thawed) lemonade concentrate
  • 1/4 cup water
  • 1/3 cup vegetable oil
  • 4 egg whites
  • 1 tub (12 oz) Betty Crocker™ Whipped Vanilla Frosting
  • 1 cup Cool Whip frozen whipped topping, thawed
  • 1 1/2 cups fresh raspberries, if desired
  • Lemon peel strips, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan) and spray the bottom of a 13x9-inch pan with baking spray that includes flour. In a small bowl, stir hot water into gelatin until fully dissolved; let it cool slightly.
  • In a spacious bowl, use an electric mixer on low speed to combine cake mix, 1/4 cup of the gelatin mixture, 1/4 cup of the lemonade concentrate, water, oil, and egg whites for 30 seconds, then increase the speed to medium for 2 minutes. Transfer the batter into the pan. Set aside the remaining gelatin mixture and lemonade concentrate for later use.
  • Bake for 25 to 31 minutes until a toothpick inserted in the center comes out clean. While the cake is warm, poke it all over with a fork. Scoop out 1 tablespoon of the reserved gelatin mixture into a microwavable custard cup or small bowl. In another bowl, combine the rest of the gelatin mixture with the remaining 1/4 cup lemonade concentrate, then pour it slowly over the cake. Allow the cake to cool completely for about 1 hour.
  • Combine frosting and whipped topping in a medium bowl, then frost the cake. Microwave 1 tablespoon of gelatin mixture on High for 10 seconds to liquefy. Use a 1/4 teaspoon measuring spoon to place small drops of the gelatin mixture over the frosting. Swirl the gelatin into the frosting with a spoon or toothpick. Garnish each piece with raspberries and lemon peel strips. Refrigerate covered.
