Ravioli caprese salad with salmoriglio dressing

Elevate Caprese salad with store-bought ravioli for a quick and delicious meal.
Ingredients:
  • 630g packet roasted pumpkin and fetta ravioli
  • 3 ripe tomatoes, thickly sliced
  • 350g tomato medley, sliced
  • 2 x 120g tubs fresh mozzarella, drained, torn
  • 125.00 ml fresh basil sprigs
  • 40.00 ml finely chopped fresh basil leaves
  • 20.00 ml finely chopped fresh oregano leaves
  • 1 small garlic clove, crushed
  • 42.00 gm lemon juice
  • 56.88 gm extra virgin olive oil
Instructions:
  • Prepare the pasta following the instructions on the packet until it's tender. Drain the pasta, then rinse it under cold water and drain it well.
  • Prepare the flavorful Salmoriglio Dressing by mixing fresh basil, oregano, minced garlic, lemon juice, and olive oil in a small bowl. Don't forget to season with salt and pepper to taste.
  • In a large bowl, toss the ravioli with one third of the dressing. Arrange the ravioli mixture, tomato slices, mozzarella, and fresh basil sprigs on a large serving platter or individual plates. Finish by drizzling the remaining dressing over the top. Serve and enjoy!
