Raw artichoke salad

Ingredients:
  • Juice of 3 lemons
  • 4 young artichokes
  • 2 baby fennel, thinly sliced, fronds reserved
  • 150g button mushrooms, thinly sliced
  • 80g aged manchego cheese or pecorino, shaved
  • 80ml olive oil
Instructions:
  • Prepare the artichokes by snapping off the tough outer leaves until reaching the pale ones, peel the stems, trim tops by 2cm, and cut them in half. Remove the hairy choke using a teaspoon. Slice the artichokes thinly and immediately toss them with lemon juice in a bowl. Season with salt and pepper, mix well, and let them marinate for 30-60 minutes.
  • In a bowl, mix all ingredients except fennel fronds. Add artichokes and lemon juice, gently toss together. Top with reserved fronds and serve promptly.
