Really easy Mediterranean roast dinner

Quick Mediterranean dinner with microwaveable chicken.
Ingredients:
  • Microwaveable roast chicken
  • 380g couscous
  • 80ml lemon juice
  • 400g purchased chargrilled vegetables (eggplant, capsicum, button mushrooms)
  • 4 marinated artichoke hearts, quartered
  • 200g natural low fat yoghurt
  • Salt & freshly ground pepper
  • Small fresh mint leaves, to serve
Instructions:
  • Follow the cooking instructions on the chicken packet. Allow the chicken to rest for 10 minutes before dividing it into six portions.
  • Place couscous in a large heatproof bowl. Pour in 1 2/3 cups (410ml) boiling water and lemon juice. Let it sit for 5 minutes until liquid is absorbed. Fluff the grains with a fork.
  • Chunkily slice the chargrilled eggplant and capsicum. Mix them with the mushrooms, artichokes, and couscous.
  • Season yoghurt with a pinch of salt and pepper. Serve chicken with couscous, a dollop of seasoned yoghurt, scattered mint leaves, and lemon wedges on the side.
