Get a bunch of fresh spring radishes and toss them in a vibrant salad.
Ingredients:
  • 12 radishes, quartered
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Dash freshly ground black pepper
  • 1 tablespoon torn fresh Italian (flat-leaf) parsley
  • 1/4 cup shaved Parmesan cheese
Instructions:
  • Add radishes to a medium bowl. In a separate small bowl, combine oil, lemon juice, salt, and pepper. Drizzle the oil mixture over the radishes and toss to combine. Finish by sprinkling parsley and cheese over the top.
