Ginger adds warmth & comfort to red cabbage slaw with a spicy kick from wasabi.
Ingredients:
  • 3 cups thinly sliced red cabbage
  • 0.75 cup diced red bell pepper
  • 2 shallots, diced
  • 1 (1 inch) piece fresh ginger, peeled and minced
  • 10 leaves fresh basil, snipped
  • 0.25 cup mayonnaise
  • 1 lemon, juiced
  • 1.5 teaspoons wasabi paste
  • freshly ground multi-colored peppercorns to taste
  • 0.25 cup toasted pine nuts
  • 2 tablespoons salted sunflower kernels
Instructions:
  • In a large bowl, mix together cabbage, red bell pepper, shallots, ginger, and basil. In a separate bowl, whisk together mayonnaise, lemon juice, olive oil, wasabi paste, and ground pepper. Pour the dressing over the cabbage mixture and toss to combine. Finish by adding pine nuts and sunflower kernels on top.
