Red curry prawn skewers

Ingredients:
  • 12 green prawns, peeled, deveined, tails intact
  • 40.40 gm coconut milk
  • 28.00 gm red curry paste
  • Steamed brown rice, to serve
  • 1 long red chilli, seeds removed, finely sliced, to garnish
  • Coriander sprigs, to garnish
Instructions:
  • Heat up a chargrill on high heat and soak 4 wooden skewers in water for 10 minutes to prevent them from burning while cooking.
  • Skewer 3 prawns on each stick. Mix coconut milk and curry paste in a bowl and brush over the prawns. Grill for 1-2 minutes per side until fully cooked. Serve over rice with lime wedges, sliced chili, and fresh coriander on top.
