Red velvet pancakes with cream cheese glaze - a decadent twist on a Southern classic for a special breakfast treat.
Ingredients:
  • 1 cup confectioners' sugar, sifted
  • 1 (4 ounce) package cream cheese, softened
  • 1 tablespoon milk, or as needed
  • 1.5 cups all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 0.25 cup milk
  • 2 teaspoons red food coloring
  • 1 teaspoon distilled white vinegar
  • 0.25 cup melted butter
Instructions:
  • Using an electric mixer, blend confectioners' sugar, cream cheese, and 1 teaspoon vanilla in a large bowl until smooth. Add 1 tablespoon milk to reach a pourable consistency. Set aside the glaze.
  • Combine flour, white sugar, cocoa powder, baking powder, and salt in a mixing bowl, whisk until well combined, then set aside.
  • In a separate mixing bowl, vigorously whisk together eggs until smooth. Add buttermilk, 1/4 cup milk, food coloring, vinegar, and remaining 1 teaspoon vanilla. Combine well and stir in the flour mixture until just moistened. Gently pour in melted butter and mix until fully incorporated with a few small lumps of flour remaining.
  • Preheat a greased griddle over medium-high heat. Spoon batter onto the griddle and cook until bubbles form and edges are dry. Flip and cook until golden brown. Repeat with remaining batter.
  • Drizzle glaze over the pancakes before serving.
