Indulge in scrumptious red velvet pancakes with a decadent Cream Cheese Glaze.
Ingredients:
  • 2 cups milk
  • 2 tablespoons white vinegar
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.25 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.33333334326744 cup unsalted butter, melted
  • 2 large eggs
  • 2.25 teaspoons red food coloring
  • 2 teaspoons vanilla extract
  • cooking spray
  • 6 ounces cream cheese, softened
  • 3 tablespoons butter, softened
  • 0.25 cup milk, plus more if needed
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons confectioners' sugar for dusting
Instructions:
  • Preheat oven to a gentle 200°F (95°C).
  • In a bowl, combine 2 cups of milk with vinegar and allow it to rest until the milk sours, approximately 2 minutes.
  • Combine flour, white sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl, sifting and whisking together until well mixed.
  • Combine the milk mixture, melted unsalted butter, eggs, red food coloring, and 2 teaspoons of vanilla extract and whisk until smooth in a bowl.
  • Combine the milk mixture with the flour mixture, stirring until just combined and the batter is lumpy.
  • Preheat a cast-iron skillet over medium-low heat and coat with cooking spray. Pour 1/4 cup of batter onto the skillet and cook until bubbles appear and edges are dry, about 3 to 4 minutes. Flip and cook until golden brown, for another 2 to 3 minutes. Repeat with the rest of the batter. Keep the pancakes warm in the oven on a baking sheet.
  • In a bowl, mix cream cheese and softened butter until light and fluffy, about 2 minutes. Add 1 cup confectioners' sugar, 1/4 cup milk, and 1/2 teaspoon vanilla extract; beat until smooth, adding more milk as needed for desired consistency. Pour the cream cheese glaze over pancakes and dust with the remaining confectioners' sugar.
