Versatile and elegant, these treats are perfect for breakfast, afternoon tea, or a light dessert - sophisticated enough for guests, yet easy enough for everyday indulgence.
Ingredients:
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon instant coffee granules
  • 0.75 cup white sugar
  • 0.5 cup miniature semisweet chocolate chips
  • 0.5 cup chopped walnuts
  • 1 egg yolk
  • 1 tablespoon water
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your baking sheet by lightly greasing it or lining it with parchment paper.
  • In a bowl, whisk together the flour, salt, cocoa powder, baking powder, cinnamon, and coffee granules. In a separate large bowl, cream the butter and sugar with an electric mixer until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla with the last egg. Gradually add the flour mixture and mix until just combined. Gently fold in the chocolate chips and walnuts until evenly distributed. Divide the dough in half and shape each half into 8x2 inch rectangles about 1 inch thick. Arrange them 3 to 4 inches apart on a baking sheet. In a small bowl, whisk the egg yolk with water and brush over the top of each loaf.
  • Bake both loaves in the preheated oven for 20 to 25 minutes until firm. Let them cool for 10 to 12 minutes. Reduce oven heat to 300 degrees F (150 degrees C) and slice each loaf diagonally into 3/4 inch slices. Place the slices, cut-side up on a baking sheet and bake until dry, 10 to 15 minutes on each side. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
