Reese's Peanut Butter Cup Cupcakes

Indulgent cupcakes filled with mini peanut butter cups, topped with decadent milk chocolate and crunchy peanuts.
Ingredients:
  • 1 cup brown sugar
  • 0.5 cup butter
  • 0.25 cup peanut butter
  • 2 eggs
  • 1.5 cups all-purpose flour
  • 1.75 teaspoons baking powder
  • 0.5 cup milk
  • 0.5 cup water
  • 48 mini chocolate-covered peanut butter cups (such as Reese's®)
  • 1.5 cups chocolate chips
  • 0.125 cup chopped peanuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 2 muffin tins with paper liners.
  • In a medium bowl, mix brown sugar, butter, and peanut butter until creamy using an electric mixer. Gradually beat in eggs one at a time until fully combined.
  • In a separate bowl, mix flour and baking powder together. Gradually blend into the creamy mixture. Add milk and water; stir until batter is thick and smooth. Spoon batter into muffin tins. Press 2 mini peanut butter cups into each cupcake.
  • Bake in the preheated oven for 20 to 25 minutes, or until the edges are firm and start to pull away from the sides of the pan.
  • Place a generous mound of 15 to 20 chocolate chips on top of each cupcake. Pop the cupcakes back in the oven until the chocolate chips begin to melt, typically around 1 minute. Drizzle the melted chocolate over the cupcakes and finish off with a sprinkle of chopped peanuts.
