Delectable spaghetti squash salad with lemon dressing, cucumber, red onion, cherry tomatoes, and kalamata olives.
Ingredients:
  • 1 spaghetti squash, halved and seeded
  • 8 ounces cherry tomatoes, halved
  • 6 ounces pitted kalamata olives, halved
  • 2 English cucumbers - peeled, seeded, and sliced
  • 1 small red onion, sliced thin
  • 1 clove garlic, minced
  • 0.25 cup lemon juice
  • 1 tablespoon lemon zest
  • 0.25 cup olive oil, or more if needed
  • 1 tablespoon garlic salt
  • ground black pepper to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and arrange the squash halves cut-side down in a large baking dish.
  • Bake in the preheated oven for 30 minutes, then allow it to cool before serving.
  • Combine cooled spaghetti squash, tomatoes, olives, cucumbers, red onion, and garlic in a large bowl and mix thoroughly.
  • Combine lemon juice and lemon zest in a small bowl, then gradually whisk in olive oil. Season with garlic salt and pepper. Drizzle over spaghetti squash and toss to coat. Chill for at least 2 hours before serving.
